Hervé Mons took over his father Hubert's affinage operation in 1983 and built it into one of France's premier affinage houses. Mons ages cheeses from 70+ small producers in the Loire and surrounding regions in renovated railway tunnels and cellars in Saint-Haon-le-Châtel. The cheeses are then sold to top specialty retailers including Neal's Yard Dairy, Murray's Cheese, Formaggio Kitchen, and many of the best French and international fromagers. Hervé Mons received MOF in 2000 (same cohort as Laurent Dubois). The brand is primarily B2B — most consumers encounter Mons cheeses with the affineur named on the label at specialty counters rather than buying directly from Mons. This is what mature affinage transparency looks like.
