Climate

Temperate continental climate with notable diurnal temperature variation. The Loire River valley provides cool humid air conducive to specific goat-cheese aging.

Terroir

Limestone caves (tuffeau stone) throughout the region provide natural aging conditions. The geology that produces Loire wine also produces the conditions for Loire goat cheese.

Historical context

Goat cheese tradition in the Loire dates to Saracen invasions in the 8th century — goats were introduced by Moorish forces. The cheese tradition developed during medieval times. Wine and cheese pairing traditions are deeply integrated here.

Modern status

Five AOP goat cheeses concentrated in this region (Crottin de Chavignol, Selles-sur-Cher, Sainte-Maure de Touraine, Valençay, Pouligny-Saint-Pierre, Chabichou du Poitou nearby). Smallest cheeses in the French AOP system — most weigh 100-250g.
