Founded by Anne Saxelby in 2006 as an explicit corrective to the European-import bias of US specialty cheese — Saxelby stocks American cheese only, sourced directly from small producers (under 500 wheels per year is common). The Essex Market counter and the wholesale operation (supplying NYC restaurants) became the editorial center of American specialty cheese during Saxelby's lifetime. Anne Saxelby died in 2021 at age 40; the business continues under her staff with the original editorial position intact. If a cheese is at Saxelby, it's been vetted personally. The American-only position remains rare and influential.
