Climate
Cool maritime; frequent coastal fog; mild temperatures year-round. The famous "Humboldt fog" — afternoon coastal fog rolling in — gave the iconic Cypress Grove cheese its name.
Terroir
Redwood-coast terrain with mixed pasture and forest. Pacific Northwest-adjacent climate suits goat dairying particularly well; the cool damp conditions enable specific aging traditions.
Historical context
Cypress Grove's founding in 1983 effectively put Humboldt County on the specialty cheese map. Mary Keehn's creation of Humboldt Fog (around 1990) became the iconic American goat cheese and put the region in the editorial spotlight.
Modern status
Cypress Grove remains the dominant Humboldt cheese producer (now Emmi-owned but still produced locally). Smaller goat dairies (Pennyroyal Farm and others) operate in the broader region. The "American goat cheese" identity is shaped largely by what came out of Humboldt.
