Cypress Grove
California goat-cheese pioneer. Humboldt Fog — vegetable-ash-line bloomy goat cheese — is the iconic American goat cheese.
Founded in 1983 by Mary Keehn (a single mother who started making goat cheese from her backyard herd), Cypress Grove created Humboldt Fog around 1990 — a soft-ripened goat cheese with a vegetable-ash line down the middle — and it became the iconic American goat cheese, widely imitated but rarely matched. The company also produces Truffle Tremor (Humboldt Fog with black truffles), Midnight Moon (aged Dutch-style goat), and several other respected goat cheeses. Acquired by Switzerland-based Emmi in 2010; Mary Keehn stayed involved through transition and has formally retired. Production remains in Arcata. Despite corporate ownership, Humboldt Fog has held its production standards and remains one of the best US goat cheeses.
