Beecher's Handmade Cheese
Pike Place Market production-and-retail showcase. Flagship cheddar plus working production visible from the street.
Founded in 2003 by Kurt Beecher Dammeier at Seattle's Pike Place Market, Beecher's combined production and retail in a deliberate showcase: customers can watch cheese being made through plate-glass windows from the sidewalk. The Flagship cheddar is the signature product — clothbound-aged, with the cheddar character American cheddar traditions had largely abandoned. The Mac & Cheese sold from the counter is made with Beecher's own cheese, and the visibility of production became a tourist attraction that also happened to result in seriously good cheese. New York location added in 2011 (also production-visible). Smaller scale than Jasper Hill or Vermont Creamery; the editorial position is American-cheddar-done-properly.
