Founded in 1909 as a cooperative of Tillamook County (Oregon) dairy farmers, Tillamook is firmly commercial-scale rather than artisan-scale, but it deserves coverage for two reasons: first, the medium and sharp cheddars are genuinely well-made within commercial constraints (far above mainstream American supermarket cheddar in flavor development); second, the cooperative model has preserved small-farm Oregon dairy operations that would otherwise have been consolidated. The 3-year-aged 'Vintage' cheddar competes credibly with mid-priced specialty cheddars. The visitor center in Tillamook is a destination of its own. Editorial position: not what to buy if you want artisan, but a good demonstration of what commercial-scale cheese done well looks like.
