Founded by Ihsan Gurdal (originally from Turkey) and Valerie Gurdal in 1978, Formaggio Kitchen pioneered high-end specialty grocery in Cambridge with cheese as the centerpiece. The Huron Ave shop maintains a small but rigorously curated cheese counter; the Boston Public Market location is more recent. Formaggio's reputation for direct relationships with European affineurs (particularly French and Italian) is well-established — they're one of the US retailers most likely to have a specific affineur's product rather than just a category.
