Flavor profile
Diverse — sheep-milk delicacy in the Langhe, alpine richness in the mountains, mixed-milk complexity throughout. Less monolithic than other major Italian regions.

Climate

Continental climate with cold winters and warm summers in the lowlands; alpine conditions in the western and northern mountain zones. The Langhe hills have a microclimate suited to specific cheeses (Castelmagno, Murazzano, Bra).

Terroir

Three distinct production zones: Alps (cooked hard cheeses), Langhe hills (sheep, goat, and mixed-milk cheeses), Po Valley plains (cow-dominant). The Langhe is also Italy's most prestigious wine region (Barolo, Barbaresco).

Historical context

Long tradition of small-scale alpine and hill cheesemaking. Slow Food movement originated in Piedmont (Bra, 1986) and has championed regional cheese traditions, particularly preserving small producers in the Langhe and Cuneo provinces.

Modern status

Slow Food Presidia protect several traditional Piedmontese cheeses. The Cheese biennale (held in Bra) is the world's premier cheese festival. Robust raw-milk traditional production survives in the smaller producers.
