Founded in 1996 by Bruno and Alfio Gritti in Lombardy's Bergamo province, Quattro Portoni is the most editorially significant water-buffalo dairy producing cheeses outside the mozzarella di bufala tradition. Their range includes Casatica di Bufala (small bloomy-rind buffalo Brie), Quadrello di Bufala (washed-rind), Blu di Bufala (blue-veined buffalo), and Buffalo Caciotta. The buffalo herd is the largest in northern Italy; the dairy operates with high welfare standards visible to visitors. Water-buffalo milk produces distinctly different cheese character than cow's milk (richer, sweeter, more fat) — Quattro Portoni demonstrates this in categories where buffalo milk had not historically been used.
