History

Developed in California in the 1930s from Spanish goats brought via Mexican missions, crossed with selected breeds for dairy yield. The distinctive "elf ears" or "gopher ears" (very short ear cartilage) are the visual signature. Recognized as a breed by the American Dairy Goat Association in 1958.

Flavor character

Sweeter and less intensely goaty than Alpine; higher butterfat than Saanen. Favored by US producers wanting balance of yield and flavor.
